2 lbs. Filet of Salmon 2 tbsp. + 2 oz. Extra Virgin Olive Oils 4 oz. Arugula 1 Fennel bulb, fronds removed, shaved or sliced thin. 1 medium Red Onion, shaved or sliced thin 2 Navel Oranges, juiced Salt & Pepper, to taste
Season salmon with the olive oil, salt and pepper, grill on medium heat for about 4 to 6 minutes per side.
Mix the arugula, fennel and red onion; mix the orange juice, olive oil, salt and pepper in a bowl, serve with the salmon.
