Salmon Orange Fennel

Grilled Gulf Of Maine Salmon With Orange And Fennel

This is a vibrant, heart-healthy dish. You’ll love the anise-flavored fennel and tangy orange.

Prep Time: 20 Min.
Cook Time: 15 Min.
Yield: 4 servings

Ingredients
2 lbs. Filet of Salmon
2 tbsp. + 2 oz. Extra Virgin Olive Oils
4 oz. Arugula
1 Fennel bulb, fronds removed, shaved or sliced thin.
1 medium Red Onion, shaved or sliced thin
2 Jumbo Navel Oranges, juiced
Salt & Pepper, to taste

Directions
  1. Season salmon with the olive oil, salt and pepper, grill on medium heat for about 4 to 6 minutes per side.
  2. Mix the arugula, fennel and red onion; mix the orange juice, olive oil, salt and pepper in a bowl, serve with the salmon.
