Pan Roasted Maine Lobster

It takes just under 7 hours for fresh from the docks Maine lobster to reach Stew Leonard’s seafood counters.  Pan roasting the lobster keeps it moist and tender.

1. Place the olive oil in a 10 inch sautee pan over med high heat, add the onion and sundried tomato, sweat for a minute.


2. Place lobster on top of onion and tomato cut side down, add the water and cover the pan and simmer for  6  minutes.


3. Uncover the lobster, add the marsala wine and parsley and reduce the liquid by half on high heat.


4. Place lobster on a serving dish, take  3 tbsp. Of butter and swirl it into the remaining sauce in the pan and then pour the sauce over the lobster.
