Confetti Orzo

A quick and easy side dish, especially for kids.  They’ll love the small pieces of “confetti” vegetables!


Preparation Time: 15 MINUTES

Cooking Time: 20 MINUTES  


Yield: 4 to 6 servings

Minced (About 3 large cloves)

1-1/2 cups  Orzo $ Add to Shopping list
1/4 cup  Water

1. In a pan, heat olive oil and sauteé the garlic, onion, celery, carrots, red pepper, and rosemary for 5 minutes, stirring. Add the water, and simmer for 7 minutes or until vegetables are tender.

2. Boil the orzo in three quarts of salted water for 7 minutes.

3. Drain the cooked orzo in a colander. Briefly rinse under cold water. Stir into the vegetable mixture. Adjust seasonings to taste. Serve as
a side dish.
