Balsamic vinegar adds a dash of complexity to this flavorful relish.  Great on pasta, steak or chicken.

1. Peel the onions and cut them in half vertically. Slice the onion into thin strips to make about 3 cups. Halve the plum tomatoes, then chop them into 1-inch cubes to make about 3 cups.

 

2. Cover a pan with the olive oil and sauté the onion until soft, about 5 minutes. Add the tomatoes, salt, and pepper, and cook the relish over medium heat for 6 to 8 minutes. Add the balsamic vinegar and serve.
