Stew's Guacamole Dip |

INGREDIENTS : 2 large ripe avocados (the Floridas are bigger than the California Haas variety) Juice of 1 lime 1/4 cup finely minced onion (about 1/2 medium onion) 2 tablespoons minced serrano chilies, canned or fresh (you may use jalapeƱo, but beware of its heat) 3/4 cup peeled, seeded, and coarsely chopped tomato 1/4 cup chopped fresh cilantro leaves 1/2 teaspoon salt (or to taste) Freshly ground black pepper to taste -

COOKING INSTRUCTIONS : 1. Halve and peel the avocados. Remove the pits and any brown tissue. Place the avocados and the lime juice in a mixing bowl.
2. Slice the avocado into chunks. With a fork, mash them coarsely. Add the chopped onion, chilies, tomatoes, coriander, salt, and pepper. Mix well
